Want to know how to live Icelandic? A combination of hearty Viking genes, active, healthy living and Icelandic seafood helps Icelanders live their lives to the fullest. Swimming in the ocean is an old tradition and a social activity in Iceland. Here you can see the Icelandic chef Hafliði Halldórsson fix up a traditional Icelandic seafood soup for an Arctic swimmer in Nauthólsvík, a beach in Reykjavík.
1 liter shellfish stock (can be found in most supermarkets)
60 gr butter
60 gr flour
200 ml heavy cream
50 gr salmon, diced
50 gr Icelandic wolf fish, diced
50 gr monkfish, diced
Melt the butter in a pan and mix in the flour until fully mixed and has formed a smooth texture, whisk into the cold shellfish stock and bring to a boil, stirring frequently. Boil for 30 min and add the heavy cream and season to taste. Add the fish and leave in the soup for 1-2 minutes before serving.
